High protein pumpkin cookies

Ingredients:

1 cup mashed pumpkin
3/4 cup almond butter (I used almond and pistachio)
2 tbsp raw honey
2 tbsp Almond flour.
1 or 2 teaspoons of Vanilla Essence.
1 Egg - beaten with a fork.
1 teaspoon Baking Powder.
2 Scoops Protein powder. (about 2 heaped Tablespoons)
2 teaspoons Tumeric Latte Mix (or you can use mixed spice)
1/2 teaspoon of sea salt.
Half a cup of grated dark chocolate.

Steps:

1. Heat oven to 180 degrees
2. Mix pumpkin, almond butter, raw honey, almond flour, vanilla essence, egg, baking powder, protein powder, turmeric and sea salt in a large bowl together in a large bowl until blended. I just use a wooden spoon.
3. Add grated chocolate and gently mix through.
4. Spoon onto lined cookie tray in heaps. The cookie dough spreads during the cooking process.
5. Cook for about 15 - to 20 minutes.

Allow to cool on a wire rack. Enjoy!

Makes about 12 cookies.
